    Develop your repertoire of dishes by learning new skills, techniques, ingredients, equipment and more. Discover a world of culinary and baking methods to create new recipes.

    Work through the course material when you are able. The courses are designed so you can access the material at any time. Learn from a variety of resources including videos, guest speakers, handouts, activities, discussions, recorded Q&As and tests.

  • Interactive Community

    Learn from active industry professionals. All of the instructors are experienced professionals with a wide breadth of experience to share with students. Every course includes discussions for interaction. There's also a community page for sharing between all students.

Thorsten Pannek

Thorsten has a passion for specialty artisan breads with a strong commitment to quality and excellence in customer experience. He is a baking instructor, product developer and consultant specializing in artisan bread. He is a European trained baker and grain miller with a passion for artisan bread, fresh whole grains and fermentation. He has over 20 years of experience in European and North American commercial baking industries.

Emanuela Costantini

Trained in Italy to be a lawyer, Emanuela, initially came to Canada to learn English. After seven years in the luxury car business, she finally decided to turn her fixation and obsession with food into her profession. She worked the line, graduated from the Chef School at George Brown College, founded Seven Cooks Inc., her catering business dedicated to making lunches for food photographers, and became a Culinary Instructor with contagious passion for food and cooking. Some call her chef, some call her the lunch fairy. She is always a true nonna at heart. Find her at George Brown College CHCA, making pasta, pizza and all the preserved goods, in between healthy eats and decadent Italian feasts.

Frank Toneguzzo

Frank has been a chef for almost 40 years. He apprenticed and received his Red Seal in 1981. He has studied and worked in a variety of restaurants, and completed his formal training at George Brown College. Over the years he has worked at a many restaurants, catering companies and hotels. He started teaching at the college in 2000. In the 20 years he has been teaching, he has taught several different courses to a wide variety of students, including culinary foundations, professional culinary skills, Red Seal exam preparation, specific culinary topics and many other courses.


  • How are classes delivered?

    Courses are designed so you can work through the material at your own pace. There is no scheduled meeting time. Video demonstrations and lectures are pre-recorded. Get a thorough video lecture from a professional chef explaining not only how to make the recipes, but also the science and theory behind the techniques. Learn about tools, equipment, recipes, and more in these videos. Then read more in extensive handouts and recipe cards. There are online quizzes and exams to test your knowledge. Complete one assignment where you select recipes to cook to demonstrate what you have learned. There is no strict timing, so complete the course whenever you are able.
