Instructor(s)

James Pollock

James has accrued over 30 years experience in the hospitality industry. In 2007 James received his Sommelier certification from the Canadian Association of Professional Sommeliers (CAPS). Over the years James furthered his education to include certificates from the Wine and Spirit Education Trust (WSET), Italian Trade Commission, and the Saké Education Council. In addition to James’ position as Wine Director at Sassafraz, James teaches a variety of courses in wine, beer, spirits, at service at George Brown College, Niagara College, and most recently at the Shanghai Institute of Tourism. At George Brown College James has instructed wine classes for beginners, enthusiasts, professionals, and all manner of students in between.
