CCI Exam

The National Canadian Culinary Institute (CCI) practical exam is two days in length. This practical exam is administered by the Canadian Culinary Federation and is the final element for the Chef de Cuisine (CCC) certification. Module 1 is an Online "Office Day" where the menu is written, standard recipes are prepared and costed, and food requisitions are written. Module 2, the "kitchen day" of the practical exam, consists of the preparation and execution of the Module 1 menu.

This is Module 1 where candidates will write, cost and prepare food requisitions for a six-course menu for four covers from a provided ingredient list to set parameters.

The menu, standard recipes and requisitions must pass with 70% in order to proceed to Module 2 Practical Testing
